I just realized something…

Do we all remember my post about making yoga a priority? I really am glad I have this blog to re-read and remember those things because I haven’t been making yoga a priority and I’m going to start thinking about it more. Get myself into the zone. Goodnight.

Cakes and My Obsessions…

I had a very late breakfast, it was almost 1! 

I had a a blended fruit (that’s what I call it, cuz I don’t use any soy milk or anything) with strawberries, pineapple, tangerine juice, flax meal, and my liquid vitamins. Along with an Alternative Bagel, the sweet wheat one with strawberry jam. (the picture actually illustrates one with almond butter and jam, but it was gross, so, I threw it out and made a new one. 

After I ate, I played with Maise for a while and then, Dad and I went to B&N, I finally found My Sweet Vegan! Then, we went to Whole Foods and did our shopping. I made a simple dinner tonight, Citrus Vinegar “Chicken” that I got at Whole Foods cooked on the stove with a little oil to make more of a sauce, then, added whole wheat spaghetti for a chow mein affect, FANTASTIC! I forgot to take a picture. =( 

I also made Maisy the Canine Cake from My Sweet Vegan, I gave him a few little bites, but I’m saving the rest for his breakfast. It was made of flour, peanut butter, shredded carrots, baking soda, and applesauce, it took like 5 minutes to make it and it bakes for about 30 minutes, he really enjoyed it. 

And, last night I made a human cake which was very good, I try to make my baked goods that I make just for us on the healthier side by using wheat four and such (I don’t do this for functions or events though, because everyone seems to think all vegan food is healthy and gross, so, I steer clear of healthy for the omnivores. lol)

Anyway, on to other topics, I was reading SELF magazine this evening and one of the Q&A things was someone saying she always gains weight in the summer because of all the ice cream and such and it got me thinking, I take my own food with me almost everywhere I go and I eat the same healthy foods all the time, so, I don’t have that problem, and see, if people (even omnis) just took their own healthy food with them places, they wouldn’t have that problem either. Seem irrelevant? Getting to know me, getting to love me. 

 

I am thoroughly enjoying Kathy Freston at the moment, I love her book Quantum Wellness and have since started using her guided meditation CDs and I feel so lovely, it’s a wonderful series, I highly recommend it. I’m also reading ‘A Rare Breed of Love’ and ‘The Gatecrasher’. Sadly, TV season is over, but I’m filling my time with writing, reading and music instead. My playlist right now is something along the lines of Rockferry, Elvis, Rockferry again, Elvis again, The Beatles, and some Jack Johnson tossed in occasionally. Yes, I’m totally obsessive compulsive and other than Duffy, my recent compulsion has been cleaning, I find myself spending hours a day cleaning the kitchen and living room and being sure nothing is out of place, it’s a strange scenario, but I really do enjoy it, so, no harm done, right?

At Peace…

I am feeling just lovely, I did a guided meditation (Kathy Freston’s ‘Perfect Weight’) after my pilates tonight and I am feeling very at peace. I made a cake tonight, whole wheat vanilla cake with a thick vanilla cream ‘cheese’ icing that I just put on top and let it drizzle down the sides, then I put strawberry fans on top and it looked lovely, I’ll take a picture of it in the morning and show it to you. Next week, I’m going to make my first bread attempt….drumroll please….focaccia. I’m very excited, I found a recipe that has instructions and pictures, so, I think I can do it. Anyway, it’s 4 am, so, I’m off to sleep.

So…

Last night I made some mini cupcakes, but I personally didn’t care for them, I think it’s because I wasn’t able to make a traditional frosting-note to self: always keep powdered sugar on hand-but dad loved them, he ate almost a dozen in one evening! I also made my first ever attempt at vegan alfredo and I hated it, it was a tofu based sauce and I really hated it, I think I’ll try the one from In the Kitch next time I attempt it. I haven’t been reading Quantum Wellness for the past few days, but I’m going to pick it back up this evening in bed, it makes me feel so good knowing that I am not only moving toward a healthier physical me, but to a healthier spiritual me too. I had some whole wheat pasta tonight because I don’t have much in the pantry to cook and I didn’t really feel like cooking anyway. I also juiced today, I made a small batch of apple and a small batch of watermelon to drink tomorrow. Maisy drank almost a whole glass of watermelon juice, I think he enjoys the juicing days more than I do. Dad is at dinner with mom tonight, trying to nail down a divorce and I’m sitting here waiting for him to come home, he said about 9, meaning more like 9:30 or 10. I think I’ll go and clean, nighty night.

Hello!

So, we all remember my post about dusty relationships? I have rid myself of them and I feel a million times better, it’s like all that anger was just inside killing all the happiness and now that it’s gone, I’m feeling very different. I highly recommend the removing of the dusty relationships. I also have started pilates, but it’s harden than I thought it would be, I think I’ll stick my yoga and jogging until I slim down a little bit, that should make the core work a lot easier and probably a lot more effective. So, I just wanted to say hello.

Yawn

I’m very tired, so this may be a little short. Just a warning. =) 

Today, I went to Whole Foods, Ikea, and Cost Plus 

I just got the essentials at Whole Foods, got a cute new lamp at Ikea and some beautifully real looking silk flowers from Cost Plus. It was a lovely day and I am having a nice evening watching First Wives Club with dad. So, all, as I said, short blog because I’m exhausted. Nighty night.

Dusty…

I’m reading the book Quantum Wellness by Kathy Freston and I’ve had a bit of a revelation. I am a pretty conscious person, like with eating, her biggest thing is conscious eating i.e. veganism and I’m already a vegan and I try to take time to reflect by myself and visualize, but one thing that I continue to allow are dusty relationships, I keep anger and pain inside, when really things should be addressed right away so that they don’t fester and hurt me. Why is this a revelation? Because I have a few of these dusty relationships and I’m ready to rid myself of the anger and pain and deal with them. I have the drive to deal with them. This is a nice feeling.

Boring…

I told myself I was going to be in bed by 11:45 and now, it’s 12:06, so that didn’t happen, but, let’s make time for a quick blog and make it 12:16, ok? Good, glad we agree. 

I had a nice day, went to Whole Foods to get some things for the cupcakes and dips. We went for a walk, I did my interval training, but it was slower than I would have liked because Hil is obviously pretty slow. Maisy enjoyed the running, though. Ok, when I said quick I guess I really meant it, I’m tired and have nothing else to say. goodnight.

Potluck…

So, baking and cooking is going into over drive this week, I need to decide what to make to take to a non-veg appetizer party, I’m thinking mini cupcakes (possibly of the apple variety) and I also want to take something dad and I can eat other than dessert, so, I’m going with my special white bean hummus with pita bread and carrots, but I want to take one more thing, cuz, come on, who can get through two and a half hours with hummus alone? I just want to prove to a bunch of people that my vegan food is way better than what the hostess will be serving (probably store bought everything and diet coke, icky) I’ll figure something out. See you tomorrow. 

 

UPDATE: I’ve decided, I’m going to bring hummus with pita bread and Vegan Con Queso with tortilla chips. Yum!

Cupcakes!

These were soo good, velvety smooth texture and a frosting so incredibly good I could make it every day!
